You hate it, but you love the results!

Many of you may know that my daughter has her first full time real job. I am very proud of her for taking her own initiative in preparing her meals for the week. She has prepared breakfast and lunch. ???

She is making her own coffee too!!! (can you imagine how much money she is saving with no Starbucks bill??) Chloee is an excellent cook and came up with these basic recipes on her own.

Let’s start with breakfast.

Mason Jar Breakfast:

  • Scrambled Eggs
  • Turkey sausage
  • Green Beans
  • Optional – cheese

She used frozen green beans because that was what we had in the house.
Cook scrambled eggs, sausage. Place them in the mason jar. Top with green beans and cheese. Heat in microwave at the office.


English Muffin Egg Sandwich:

  • Eggs
  • Sausage
  • Spinach
  • Cheese

Cook, assemble and wrap in parchment paper. Put in freezer. Microwave at the office.
I am not crazy about using a microwave☹ However, it is better than a McDonalds breakfast sandwich.
You can make any of those healthy by choosing range free organic eggs, organic chicken sausage, organic spinach, leave out the cheese. Change out the spinach with a different veggie.


Coffee:

  • two tsp instant coffee
  • tsp brown sugar
  • 2 tbsp water
  • 8oz of oatmilk shake for 90 second with chilled cocktail shaker

Use a bottle carrier to get the drinks to work without spilling.

Lunch:

  • Wild rice
  • beef
  • kale

Chicken, butternut squash, kale, cauliflower rice

She has even copied the Autumn Harvest Bowl from SweetGreen

It comes down to a couple of hours on Sunday is devoted to cooking.

Some healthy tips. ?

I like Kevin’s meals. I have found them at Whole Foods, Pete’s Fresh Market, Costco.
It saves on time for cooking the meat and it adds a seasoning for people like me who can’t cook.
Look for grass fed beef. ?
They sell frozen cooked rice.
Store the premade meals in freezer safe glassware. Take it out of the freezer and put in the frig the night before.
Use cloth napkins.
Use Yeti mugs to keep drinks hot and spill proof. ☕
